LSTC Pumpkin Bread
From the Lutheran School of Theology, Chicago Cookbook
Ingredients:
2 cups canned pumpkin
3 cups sugar
1 cup water or milk
1 cup canola oil
4 eggs
Mix each list of ingredients separately; next mix all ingredients together. Bake at 350 degrees Farenheit. Oven time varies according to loaf size (or muffins, etc.).
Yield: 8 mini-loafs (approximately 40 minutes)
Sometimes it's hard to open the door to caring.
"I hate to be empty-handed when I welcome a new neighbor.
And when I want to show someone that I care, I often accompany my words with this little loaf.
These little loaves are delicious and always well-received!
3 1/2 cup flour
2 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1/2 tsp. nutmeg
3/4 tsp. ground cloves
Pumpkin Bread
I first received one of these pumpkin mini-loaves at a military chaplain spouse coffee that I attended near Ft. Jackson, SC in 2008. I have since made this recipe countless times.
Give them away warm and fresh...or freeze them to have on hand when a need suddenly arises. Share them with neighbors, friends, deployed spouses... It's a small token to encourage others and to show that you care."
